Aaron Pollack is the current Beverage Director for UNA Hospitality, which is comprised of The Victor Bar, Love Street, and Bistro Monadnock. With over 20+ years of industry experience, Aaron has seen it all. With stints running the bar programs at spots such as The Dawson, etta, Raised, and Adalina, coupled with several local, national, and international cocktail competition successes, Aaron has helped shape and drive the Chicago beverage scene.
